Job Description

Kissaki is seeking an experienced Nigiri Chefs for our Water Mill, NY location. Please note, this is a seasonal summer position. HOUSING WILL BE PROVIDED.

RESPONSIBILITIES:

• Making sushi daily in front of high-profile guests.
• Friendly interactions with the guests.
• Organized and able to work at a high volume level.
• Sushi Chefs: Prepping fish, maki, sides, sets of miso, edamame, and other ingredients/dishes to be used in service.
• Creating new dishes or preparations for the often-changing menu.
• Sushi prep: set up the sushi bar, and take direction from the head chef.

REQUIREMENTS:

• A minimum of 3 years as a Sushi Chef in an Omakase restaurant making Nigiri in a high-volume Kitchen preferably at an upscale restaurant.
• Extensive knowledge of Japanese food and culture.
• Proficient in English.
• Advanced knife skills.
• Availability to work nights, weekends & holidays.
• Positive attitude.

Schedule:

• 5 days a week.
• Weekends required.
• Day shift.
• Night shift.
• 8-hour shift.
• 10-hour shift.
